Born and raised in the beautiful province of Ogliastra, Sardinia, Head Chef Paolo Cannas has been cooking up creative, stunning dishes in the UK since the late 1980’s.
His style of cooking has always remained loyal to his Sardinian roots and his passion for refined authentic Italian dishes has seen him, over the years, proudly front up some of London’s most renowned Italian restaurants, the likes of; Diverso, Signor Sassi, Rucoletta and Vicino located on Fulham’s prestigious Kings Road.
Bringing with him to Ware, a wealth of knowledge and a huge respect for the simplicity of our wonderful Italian Cuisine, Paolo was the perfect choice for Enoteca Zero.
Stefano comes from a long line of restaurant owners; he is fifth generation and has been brought up in the hospitality industry. He is the son of a Chef and hugely passionate about the industry. A self-taught wine expert, Stefano was the Food & Beverage manager of a 5 * resort on the Amalfi Coast for 6 years. Here he fine-tuned his knowledge of the service industry, working with the some of the best in the industry. Finally being able to bring to life Enoteca Restaurant and its Wine Cellar is a long hard worked for dream.
Paolo has created a menu which pays homage to the classics and captures the uncomplicated essence of fresh Italian cooking. Showcasing plates from Land and Sea, you can find plates such as ‘Homemade linguine with Fresh Lobster’ & ‘Slow cooked Lamb with a red wine reduction’.
Working closely with all local suppliers, Paolo is very selective about the produce that enters his kitchen, ensuring only the best and freshest of ingredients go into creating his dishes.
